After having the baby our incredible spouse group put together a meal train for our family. I had forgotten how great meal trains are, not only do they ease the burden of what you’re trying to balance but they’re also a great opportunity to try new things and get some new recipes into your meal rotation.

This dish was an instant hit and something we knew we could easily recreate, so that’s what we did…three times in one week 😂 …yes, it is THAT good!

Breakfast Sweet Potato Hash

INGREDIENTS
  • 1 – medium-large sweet potato
  • 1/2 – red or yellow onion
  • 2 cloves of garlic
  • 1 – bell pepper (any color, we prefer red for this dish)
  • 1/2 pound of turkey or pork sausage
  • 4-5 slices of bacon, cut into small pieces
  • 3-4 – eggs
  • Salt and pepper
DIRECTIONS
  1. Dice up potato, onion, bell pepper and garlic. I recommend keeping the sweet potato cubes fairly small, otherwise it will take a LONG time to cook.
  2. Add 1 tablespoon of olive oil to a cast iron skillet and sauté the onion and garlic until translucent.
  3. Add in sweet potato and cook through, stirring frequently. Season with salt and pepper.
  4. In separate frying pan, fry up sausage and bacon pieces. When finished, add those and the chopped bell pepper to sweet potato mix.
  5. Preheat oven to 375*.
  6. When sweet potatoes are cooked through, pull cast iron off of stove and make 3-4 wells to crack eggs. Crack one egg in each well, salt and pepper each egg. Place directly into oven and cook until the egg whites set (typically 8 minutes…depending on your oven).
