What’s better than green beer and corned beef? Nothing! We love Saint Patty’s Day and wanted to use this as an opportunity to share some of our favorite, festive recipes with you before the big day.

REUBEN SANDWICH

(K) I’m not Irish, but my husband is, so when St. Patty’s Day rolls around we do a full blown celebration with green beer and corned beef. We’ve previously done corned beef and cabbage – which is delicious – but our absolute favorite is whipping up some reuben sandwiches and washing them down with green beer.

Did you know you can dye your own beer at home with food coloring?!

WHAT YOU’LL NEED:
  • Corned Beef Brisket**
  • Coleslaw or sauerkraut (to be honest we don’t use either, but I know a lot of people like that added crunch)
  • Swiss Cheese
  • Thousand Island Dressing
  • Rye or Sourdough Bread

**If I can get my buns to a Trader Joes before March, I’ll usually buy one of their pre-seasoned corned beef packages and then just bake that according to the directions to slice off for our sandwiches, BUT if that isn’t possible I’ll buy the corned beef unseasoned and check-out various Pinterest recipes for seasoning ideas. This is truly the most challenging part of making a reuben, don’t overwork yourself, these little sandwiches don’t require much labor to be delicious.

MAKING YOUR SANDWICH:
  • Cook the brisket according to the directions/size you purchased
  • Once the brisket is cooked, you start assembling your sandwich by toasting the bread slightly in a toaster oven or using a broiler, adding your sliced corned beef and a piece of cheese part of the way through.
  • Spread your thousand island dressing over the bare piece of toasted bread once you remove it from the oven. Top your corned beef and cheese with the coleslaw/sauerkraut, and then add your other slice of bread.

Simple, easy and a perfect way to celebrate a little Irish tradition!

PLATTER O’ REUBENS

(J) I have always been a huge birthday person. They are just the best days to intentionally celebrate one person! Sadly, my husband doesn’t love to make a big deal out of his birthday and I’m pretty sure his own personal torture would be a room full of people just there to give him attention. Haha! Luckily for the party planner in me, my husbands birthday is actually on St. Patty’s Day! Oh and yes, he is Irish, lol. It’s been my perfect excuse to still get together with friends on his birthday while not necessarily being FOR his birthday;) So I have learned how to 1. Enjoy Reubens and 2. To make Reubens for the masses!!

WHAT YOU’LL NEED:
  • 12 pack Kings Hawaiian Rolls
  • 8 oz thinly shredded Corned Beef
  • Swiss Cheese
  • 1 Cup Sauerkraut
  • 1/3 Cup Thousand Island Dressing
  • 1/4 Cup Butter
  • Dijon Mustard
  • Minced Onion
PUTTIN’ IT ALL TOGETHER:

1. Preheat oven to 350 degrees

2. Slice the sheet of rolls in half. If you aren’t incredible at slicing evenly…make sure the top is the thinner layer. Trust me! You don’t want soggy bottoms, haha!

3. Spread the Thousand Island on the bottom layer and set in a greased or lined 9 x 13 pan.

4. Layer Cheese, Beef, Cheese, Sauerkraut…then top with the other half of the buns.

5. Melt the butter in a small bowl. Mix in two tablespoons Dijon and Minced Onion and coat the top of the sandwiches.

6. Bake for about 20 min. Serve warm with your favorite Reuben Dip!
